Giggle: Duck Daddy
That Guy adopted three magpie ducks, “Clark” and two females. But Clark needs more females so he is mean and territorial, the boss of the yard and now the neighborhood. Plus, he is teaching the females his menacing ways. So, the ducks are aggressively biting and bruising everyone including, Chef Showy who has visions of Clark Confit! Meanwhile That Guy is enjoying duck eggs three ways.
Gab: Duck Eggs vs. Chicken Eggs
Duck eggs are more nutrient-dense, containing higher concentrations of Omega-3 fatty acids, iron, folate, and Vitamin B12. They are generally 50 percent larger than chicken eggs, with a richer, larger yolk and higher fat content. Duck eggs also have thicker membrane and more durable shells, which keep the eggs fresher longer than hen eggs. The higher fat and lower water content in duck eggs yield fluffier baked goods. And the protein structures in duck eggs are different from those in chicken eggs. Thus, people with chicken egg allergies can often safely eat duck eggs, and vice versa.
Gourmet: Clark Confit
From my archives, Chef Tom Saab shares his recipe and technique for making a classic duck confit. It is a three-day process that is worth the wait and the effort.
